Valpolicella Classico Superiore Squarano DOC

Lo Squarano is a Valpolicella Classico Superiore with great personality, born from an exclusive selection of vineyards located on a hill that embraces the ancient Roman ruins of the estate. The vines, cultivated using the Guyot system and with over 25 years of age, produce low-yield grapes, giving the wine extraordinary aromatic concentration.

30% of the grapes are left to dry for 30-40 days, increasing the complexity of the bouquet. The vinification takes place separately, followed by 14-15 months of aging in second and third-passage French oak tonneaux, with an additional 6 months of bottle aging.

With a deep red color with violet reflections, on the nose it releases aromas of ripe red fruit, sour cherries, and wild berries, with elegant spicy notes of black pepper. The structure is powerful yet refined, enriched by balsamic and aromatic nuances that evolve over time.

Food Pairings
Perfect with rich first courses such as pasta with ragù or pappardelle with wild boar. It pairs beautifully with semi-aged cheeses such as Taleggio and Robiola, as well as fine cured meats like Parma ham. With aging, it becomes the ideal companion for refined meat dishes, such as roast duck breast, baked capon, and stuffed guinea fowl.
