Valpolicella Classico Superiore produced with the traditional technique of refermentation on the Amarone pomace.
Fermentation and maceration of fresh grapes in October for about 8-10 days, followed by racking. The wine remains in stainless steel tanks until January/February. It is then refermented on the freshly pressed Amarone pomace to acquire greater body and complexity.

Valpolicella Classico Superiore Ripasso DOC
A refined interpretation of the traditional Ripasso, this Valpolicella Classico Superiore is born in the heart of Valpolicella, from vineyards cultivated on well-drained calcareous and clay soils. The vines, with an average age of 40 years, are trained using the Pergola Veronese and Guyot methods, and the grapes are hand-harvested in October, with a rigorous selection to ensure the highest quality.
After a temperature-controlled fermentation at (18-20°C) to preserve the aromas, the wine undergoes the traditional “ripasso” on the Amarone pomace, a process that gives it greater structure, tannins, and polyphenols. This is followed by an 8-month aging in second and third passage French oak tonneaux, which enriches the bouquet and harmonizes its aromatic depth.
Intense ruby red color, on the nose it reveals spicy notes, ripe fruit, cherry, and wild berries, with a rich and enveloping aromatic profile. On the palate, it is velvety and well-balanced, with soft tannins, lively acidity, and a long, clean finish.
Food Pairings
Thanks to its versatility, it is perfect with pasta dishes with rich sauces, semi-aged cheeses, and cured meats. With aging, it pairs best with roast duck, beef stew, pork chops with mashed potatoes, and porcini mushroom risotto.
