The pergola vineyards have an average age of 25-30 years, while the espalier vineyards with Guyot system at 2,500 vines per hectare have an age of 8-10 years.
Harvesting is done by hand with a rigorous selection of grapes at their optimal stage of ripeness between late September and mid-October. Vinification takes place after cold maceration. This is followed by an aging period in second-passage wood for 8-10 months and further bottle maturation for at least 3 months.

Valpolicella Classico Superiore DOC
This Valpolicella Classico Superiore comes from historic vineyards located in the heart of the most authentic Valpolicella, on well-drained calcareous and clay soils. The vines, 25-30 years old for the Pergola Veronese system and 8-10 years old for the Guyot-trained espalier system, ensure limited yields of the highest quality. Harvesting is carried out by hand, with a rigorous selection to pick the grapes at their peak ripeness.
After cold maceration, the wine is aged for 8-10 months in second and third-passage French oak tonneaux to develop complexity and smoothness without covering the varietal character. This is followed by further bottle aging of at least 3 months to perfect its balance.
It shows a bright ruby red color. The bouquet is dominated by ripe cherry, sour cherry, violet flowers, and spices such as white pepper and aromatic herbs. On the palate, it offers a full and balanced structure, with lively acidity and sapidity that enhance its tension and persistence, making it an elegant and refined wine.

Thanks to its versatility, it pairs perfectly with first courses with rich sauces, roasts, and white meats. Excellent with medium-aged cheeses, it also lends itself to more original combinations with spicy oriental cuisine and flavorful fish soups.
